Ingredients
- 3 cups almond flour
- 1 egg, beaten
- 2 tablespoons coconut oil
- 1 teaspoon honey
- 2 large sweet potatoes, baked and mashed
- 1/2 cup coconut oil
- 1/2 cup maple syrup
- 1/2 cup coconut milk
- 2 eggs
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon sea salt
- 1 tablespoon vanilla extract
Instructions
- Preheat oven to 350 degrees F.
- Mix the crust ingredients in a bowl until well combined. Transfer to a pie plate and press into plate, using your fingers.
- Bake for 10 minutes.
- Put all of the ingredients for the filling into a blender and blend until smooth.
- Pour into the pie plate and bake until well browned, about 45 minutes.
- Let cool completely before serving.
