Ingredients
- 2 cups pecan meal
- 1 tsp baking powder
- 1 tsp dried thyme
- 1/2 tsp sea salt
- 3 eggs
- 1/2 cup pumpkin puree
- 1 Tbs olive oil
- 12 pecan halves
Instructions
- Preheat oven to 350 degrees F.
- Combine the pecan meal, baking powder, thyme, and salt in a bowl and mix well.
- Whisk the eggs, pumpkin puree, and olive oil, and add it to the dry mixture. Stir until just combined.
- Line a muffin tin with paper liners, and fill each one about 2/3 full. Top each muffin with a pecan half.
- Bake for 15-20 minutes, until tops are browned and muffins are firm. Cool completely before serving.
