Now we can get down to business!
Chocolate Almond Butter Cups
Prep time: 10 minutes, plus freezing
Serves 12
If you love peanut butter cups, this easy and healthy version will hit the spot. Sweet and chocolaty, these will curb your cravings in a healthy way.
Ingredients:
1 cup dairy free, high quality chocolate chips
1/2 cup coconut oil
1/2 cup smooth almond butter
Directions:
Put the chocolate in a pot with half of the coconut oil and heat on low until chocolate is melted, stirring every 30 seconds or so.
Put the remaining oil in a bowl with the almond butter and whisk well.
Line a mini muffin tin with paper liners. Fill each about halfway with the almond butter mixture and top off with the chocolate. Freeze until firm. Store in the freezer.

Sounds yummy. I use coconut oil and agree with you. it is very good. I’m only a few pounds overweight, but my downfall is bread. I make my own and I know I eat way too much of it. Am enjoying your writings, etc., but miss a lot of it as I’m very busy and don’t always have time to get to the computer.
Thanks, Neely. I will definitely make these almond butter cups – they look and sound delicious! Reeces peanut butter candy bars are about the only kind any more that can tempt me beyond resistance. It will be great to have a healthier version in my freezer. Hope they aren’t so good that I want to binge!
The emotional eating round table sounds beneficial too but I’m on a fixed income and it’s just not possible right now. But thank you for continuing to share your healthy tips, stories and recipes. They really do make a difference!
